Step by Step

RECIPE INGREDIENTS

  • 400g Welsh lamb neck fillets, diced
  • 2tsp plain flour
  • 3 large potatoes, peeled and diced
  • 3 large carrots, peeled and diced
  • ½ swede, peeled and diced
  • 1 large parsnip, peeled and diced
  • 1 large leek, washed, trimmed and sliced
  • Water
  • Oil
  • Seasoning

To serve:

  • Bloomer bread
  • Dragon Mature Welsh Cheddar

RECIPE DIRECTIONS

  1. Season the flour with salt and pepper, coating the diced lamb in the seasoned flour.
  2. In a large pan, heat the oil until hot. Add the diced lamb and cook for 4-5 minutes, stirring continuously.
  3. Turn down the heat, add 1.5 litres of water. Add all the diced vegetables.
  4. Place the lid on the pot and leave to simmer for 90 minutes.
  5. Add the leek and simmer for a further 30 minutes.
  6. Season to taste.
  7. Serve with warm slied bloomers bread and a chunk of Dragon mature Welsh Cheddar
