Easter Cookies Recipes

We all have our favorite easter egg, whether you’re a Crème Egg fan or prefer Mini Eggs, whatever you like we all like to indulge at Easter.

The oldest tradition used to be painted chicken eggs, which then became the chocolate eggs in coloured foil we all know today.

If you’re looking for something to do this Easter weekend why not try your hand at baking some of our delicious Easter cookies. This recipe is quick and easy and the cookies are so tasty. The recipe uses our delicious Dragon Salted Welsh butter.

Ingredients

  • 125g Dragon Salted butter
  • 100g light brown soft sugar
  • 75g white granulated sugar
  • 1 Egg
  • 300g self raising flour
  • 1⁄2tsp. baking powder
  • 1⁄2tsp. bicarbonate of soda
  • 100g milk chocolate chips
  • 200g Mini Eggs, chopped
  • 50g Mini Eggs, whole

Method

  1. Beat the butter and sugars together until creamy.
  2. Add the egg and continue to mix.
  3. Fold in the flour, baking powder, bicarbonate of soda, and mix until a dough is formed.
  4. Mix in the chocolate chips and chopped mini eggs and stir until they are distributed well in the cookie dough.
  5. Weigh the cookies out into eight cookie dough balls – they’re about 100g each.
  6. Place on a tray and add in the remaining whole mini eggs, then place them in the freezer for at least 30 minutes.
  7. Preheat your oven to 180°C fan assist / 200°C regular.
  8. Once the dough has chilled place them on trays four at a time and flatten each dough ball slightly, bake them for 12-14 minutes.
  9. Once baked, leave them to cool thoroughly.
