Christmas Cheese and Gin Pate

Ingredients

  • 180g Dragon Caerphilly, grated or finely crumbled
  • 2 tbsp dried cranberries or sundried tomatoes marinated in 2 tbsp gin for half an hour
  • 2 heaped tbsp cream cheese
  • 1 tsp caster sugar
  • Pinch cinnamon (to go with cranberries) or a handful of walnuts (to go with sundried tomatoes)

Method

  1. Beat together the Caerphilly, cream cheese, sugar and cinnamon until smooth.
  2. Add the excess gin from the cranberries and mix well.
  3. Fold in the cranberries and spoon into a serving dish.
  4. Press down well and decorate top with cranberries or walnuts.

 

 

 

Nutty Cheddar Roast with Red Onion Relish

Ingredients

  • 2 medium sized sweet potatoes and 1 large parsnip peeled, cooked and mashed
  • 150g Dragon mature Cheddar, grated
  • 100g cashew nuts, roasted and finely chopped
  • 50g almonds or hazelnuts, roasted chopped
  • 1 large onion, finely chopped and sautéed until brown
  • 50g pumpkin seeds
  • 30g sunflower seeds
  • 2 large eggs, beaten
  • 1 tbsp fresh parsley, chopped
  • 1 dsp fresh sage leaves, chopped
  • Freshly ground black pepper
  • Sea salt
  • Large loaf tin well-greased and base lined with greaseproof paper

Method

  1. Place all ingredients except eggs into a large mixing bowl and season to taste.
  2. Beat in eggs ensure it is mixed thoroughly.
  3. Spoon the mixture into the tin and press down firmly.
  4. Bake at 180°C for 50 minutes until cooked through.
