Welsh Cheddar and Tomato Pizza

Step by Step

RECIPE INGREDIENTS

For the pizza base:

  • 400g plain flour, plus extra to dust
  • 7g sachet fast action dried yeast
  • 1 tsp. fine sea salt
  • 1 tsp. caster sugar
  • 2 tbsp. olive oil, plus extra to drizzle
  • 225ml warm water
  • 1 tbsp. plain flour, to roll-out

For the sauce:

  • 1tbsp oil
  • ½ small onion, finely diced
  • 1 garlic clove, crushed
  • 200g chopped tomatoes
  • 1tbsp tomato puree
  • Fresh basil, finely chopped
  • 1tsp brown sugar
  • Pinch of salt

Toppings:

  • 200g Dragon mature Welsh Cheddar, grated
  • Fresh basil leaves

RECIPE DIRECTIONS

  1. Preheat the oven at 240°C / 220°C, put in your trays or pizza stones as well to preheat.
  2. Mix the flour, salt, sugar, and yeast together in a bowl. Make a well in the middle, add 225ml water to bring together as a dough.
  3. Tip out onto a floured surface and knead for one minute. Leave to rest under an upturned bowl, while you get your pizza sauce ready.
  4. For the sauce: Over a low heat, warm the oil in a saucepan, adding the onion and salt. Fry gently for 15 minutes.
  5. Add the garlic and fry for another minute. Tip in the chopped and pureed tomatoes, and sugar. Bring to boil then lower the heat.
  6. Simmer uncovered for 30 minutes or until the sauce thickens. Stir the basil into the sauce – set to one side.
  7. You can now shape the dough, either roll out the dough or shape it with your fingers to form a disk approx. 30cm in diameter.
  8. Cut a large piece of greaseproof paper and sprinkle with flour (or polenta) and place the dough onto the paper.
  9. Press and continue to shape your dough with your hands to approx. 35cm.
  10. Spread the tomato sauce across the pizza and add the grated cheese and fresh basil leaves.
  11. Slide the pizza onto the preheated tray and bake for 10-15 minutes, until cheese is melted and golden brown.
