Mature Cheddar & Beer Muffins

Step by Step

RECIPE INGREDIENTS

  • 275g self raising flour 
  • 1 tsp baking powder 
  • ½ tsp salt 
  • 1 large egg 
  • 150g plain yoghurt 
  • 100ml beer 
  • 100g cheese (reserve 20g for topping) 
  • 75g gherkins 
  • 2 tsp wholegrain mustard 

RECIPE DIRECTIONS

  1. Pre-heat the over to 180°C. 
  2. Line a muffin tray with paper cases.  
  3. In a bowl, mix together the flour, baking powder and salt. 
  4. In another bowl,  mix together the egg, yoghurt and beer. 
  5. Combine the dry mix with the wet mix. 
  6. Fold in the cheese, gherkins and mustard. 
  7. Spoon into muffin cases and top with the remaining 20g Cheddar. 
  8. Bake at 180°C in an oven or air-fryer for 13-18 minutes. 
  9. Serve with a cold Welsh beer.
