Thread the skewers with the 3 different cheeses interspersed with peppers, olives and basil
Add your own additions such as roasted red onions
Place the whisky cheddar on skewer last as quite crumbly and will reduce breakage if on end of skewer
Can be prepared in advance of covered and kept chilled in fridge
Croquettes;
Mix the mashed potato, spring onion and cheese before adding the tobasco sauce.
Roll the mixture into balls of the same size and put to one side
Prepare three plates one with flour the other with the egg and the last with the breadcrumbs
roll the balls in the flour first then the egg and lastly the breadcrumbs
Put to the side onto parchment paper so they don’t stick to each other
when all the balls have been made, cover them with some oil and place in a hot oven at 180c/gas 6 for about 15 minutes, until golden brown, don’t worry if they start to come apart, they will still be delicious!
Serve with some Chilli sauce.
Baguettes;
You can use any topping you fancy for the baguettes but her are some of our ideas;
Roll some Dragon Mature Cheddar in some parma ham, place onto a slice of baguettes and serve with some basil.
cut up some cherry tomatoes, top with some grated Dragon cheddar and some olive.
