Cavern Ruby Stuffed Welsh Beef Burgers

Step by Step

RECIPE INGREDIENTS

  • 500g Welsh Beef mince 
  • ½ onion, finely chopped 
  • 4tbs Dragon Sundried Tomato and Garlic Chutney 
  • 2tbs mayonnaise  
  • 1tsp garlic powder 
  • 1 egg 
  • 80g Cavern Ruby Welsh Red, sliced into 4 squares 
  • 4 sliced bacon 
  • 2tbs olive oil 
  • 4 brioche buns, sliced and toasted 
  • ¼ iceberg lettuce,  
  • 2 tomatoes, sliced 
  • 2 pineapple rings halved lengthways. 

RECIPE DIRECTIONS

  1. Preheat oven to 220°C/200°C. 
  2. Line a baking tray with greaseproof paper. 
  3.  In a bowl, combine the mince, onion, ½ chutney, garlic powder, and egg. Season well, then shape into 8 burger patties.  
  4. Sandwich the cheese between two patties, pressing the edges. Chill for 15 minutes in the fridge.  
  5. Meanwhile, grill the bacon and pineapple for 15 minutes until crisp, set aside.  
  6. Heat the oil in a large frying pan over a medium heat. Cook the burgers for 5 minutes on each side. 
  7. Spread the bottoms of the brioche buns with mayonnaise, and the tops with the remaining chutney.
  8. Assemble the burgers from top to bottom with lettuce, tomato, bacon, burger, and pineapple.
