Cavern Aged Cheddar Baked Woodland Mushrooms


Step by Step


  • 400g mixed mushrooms of your choice (portabella, shitake, chestnut)
  • 125g Dragon Cavern Aged Cheddar, grated
  • 1 clove garlic crushed
  • 75g finely diced Pancetta
  • Fresh thyme leaves
  • Olive oil
  • 20g Dragon salted butter
  • Aged balsamic vinegar


  1. Sauté the pancetta until cooked through and beginning to brown, and set aside
  2. Using the same pan sauté the mushrooms in oil with garlic and butter until cooked through
  3. Add pancetta, thyme and grated cheddar and continue to cook until the cheese has melted and beginning to brown
  4. Serve immediately over cooked fresh pasta or on its own with crusty bread
